Mexican Chocolate Brownies, Allergy Free Life Style

While I love classic brownies, one of the flavor profiles I can never get enough of is Mexican chocolate. Something about the spicy kick mixed with the sweetness of chocolate is one of the best things in the world. I did some experimenting and am happy to report back that my recipe for Mexican Brownies using The Really Great Food Company’s Brownie Mix is a must try. Beware, you won’t be able to eat just one!

The Allergy Free Wife’s Pineapple Coconut Banana Protein Muffins

With a blizzard in the forecast for this weekend in NYC and temperatures dropping rapidly, I’ve been inspired to create a version of my tradition protein muffins with a tropical twist. Nothing makes me feel warmer than baking with my favorite flavor combinations: banana, pineapple, and coconut! The bright colors and smells that fill my apartment when making these muffins instantly transports me to a warmer destination far away from the 20 degree weather we’re experiencing!

Before being married to someone with a nut allergy, I indulged in pesto fairy often. It’s a magical sauce that can be used in a variety of ways, the perfect addition to a simple pasta dish, drizzled over homemade pizza, or mixed with mayo for a delicious sandwich spread. There are many varieties of pesto, from the traditional Ligurian version, to Mexican-inspired pepita and cilantro, to lemon and basil.
